I wanted an alternate to the regular treat of donuts that I bring in once a month or so to share with the my nurse friends. It ended up being a complete hit! Even with the donut lovers( I know, who doesn't like a donut now and then?)
It's a cross between zuchinni bread and apple cake.
It's a cross between breakfast and dessert
It's a bit sweet, a bit nutty, and a LOT fruity.
When I tasted it I thought of Missy Higgins song Warm Whispers....
"And I'm weeping warm honey and milk" She's so darn cute.
SO
I call it....
Warm Honey and Milk cake (with fruit)
2 chopped apples ( I used one Granny Smith and one Pink lady)
1 1/4 cups sugar
1/3 c oil
1 cup milk
1/2 cup honey (I use buckwheat honey, it is really rich)
2 tsp pure vanilla
3 eggs
3 cups flour (I use a mixture of 50/50 wheat and white flour)
1 cup chopped nuts (I use a slightly salted mixture of sunflower, pumpkin seeds mixed with sliced almonds.)
1 1/2 cups dried fruit of your choice ( I use cranberries, blueberries, cherries, and strawberries) 1 tsp each nutmeg, cinnamon, and baking soda
1/2 tsp salt
Cut up the apples, skin and all.
Then dice them up super fine in a food chopper or food processor.
Dice up the nuts to a similar consistency with the same chopper.
Set both the apples and nuts aside.
Whisk the sugar, honey, milk, oil and vanilla together in a bowl.
Add in the three eggs, cinnamon, nutmeg, baking soda, and salt.
Then gently mix in the flour, apples, nuts and dried fruit.
Pour mixture into oiled baking dishes.
This recipe makes enough for a shallow loaf pan AND a 12inch stoneware casserole dish. But you can use whatever bakeware you have.
Bake at 350 degrees for 40-50 minutes depending on elevation and your oven. It should pull from the sides of the baking dish and the top will be lightly browned.. Check for doneness with a toothpick, as you would a cake.
While it's still warm, grab yourself a slice with a luscious scoop of whipped cream or vanilla ice cream.
